A pattern we see often enough to write down: a brand runs a successful pilot, everyone tastes it at the plant, everyone is happy. Four months later a distributor calls about a batch that tastes wrong, and nobody can explain it because the production records are clean.
Shelf life is not a date you print. It is the period over which your product remains the thing you intended to sell. Several independent clocks start the moment you seal the container, and they run at different speeds.
Clock one: carbonation loss
In permeable packaging — PET above all — CO2 migrates out. The rate depends on the resin, the wall thickness, the surface-to-volume ratio, and above all temperature. A case that spends August in a warm warehouse loses carbonation far faster than the same case in a climate-controlled one.
This is the most common cause of "it tastes flat and too sweet." Nothing happened to the sugar. Carbonation dropped, carbonic acid dropped with it, and the sweetness that was previously balanced is now exposed.
Mitigation: carbonate to land in spec at end of life, not at bottling. Specify glass or cans if your distribution is slow or hot.
Clock two: flavor oxidation
Oxygen gets in — through headspace at fill, through permeable packaging, through an imperfect closure seal. Citrus goes first and goes badly, developing a stale, cardboard-adjacent note. Delicate fruit follows. Spice and vanilla profiles are more robust.
Mitigation: control headspace oxygen at fill, verify closure application, and be realistic about your format. A high-citrus product in PET with a twelve-month claimed shelf life is an optimistic document.
Clock three: flavor migration and scalping
Plastic packaging absorbs flavor compounds. This is called scalping, and it is selective — it does not take the whole flavor evenly, it takes particular molecules. The result is a drink that is not weaker so much as unbalanced, because the components you lost were not the ones you would have chosen.
Mitigation: if your formula depends on a specific aromatic balance, test it in the actual package over the actual timeline. Glass does not do this at all, which is one of the underrated arguments for it.
Clock four: color
Light degrades colorants and some flavor compounds. Clear glass and clear PET on a lit shelf are an ongoing exposure. Natural colors are far more fragile than synthetic ones — a genuine tradeoff that catches brands who switched to natural colorants for label reasons without adjusting expectations.
Mitigation: amber glass, secondary packaging, or accepting a shorter shelf life. Cans are immune, which is part of why they have taken so much of the category.
Clock five: microbiological
The one that actually hurts. Low pH and high carbonation make a hostile environment, which is why most carbonated soft drinks are relatively safe. But reduced-sugar products, lower-acid formulations, products with juice content, and anything with botanical ingredients are all more vulnerable.
Mitigation: this is not a place for improvisation. Get a process authority involved, validate the process, and do not modify a validated formula without re-validating. If your co-packer is casual about this, find a different co-packer.
The mistake underneath all of these
Brands evaluate their product at bottling, in a cool building, days after production. Customers evaluate it after an unknown period at unknown temperatures, in whatever package you chose.
Those are different products. The gap between them is what shelf life testing is for, and it is the step most commonly skipped because it is slow and produces no immediately usable output.
What testing actually looks like
Minimum viable version:
- Hold real samples from the actual production run in the actual package, not bench samples.
- Store at multiple temperatures — cool, ambient, and deliberately warm. Warm storage is an accelerant, useful for finding problems early.
- Taste on a schedule — week one, month one, month three, month six, month twelve, against a frozen or refrigerated control.
- Measure, do not just taste — carbonation, pH, and Brix at each point. Palates drift; numbers do not.
- Write it down. A shelf life claim you cannot support with data is a liability, not a marketing asset.
The practical version for a small brand
You probably will not run a full protocol on your first production. What you should absolutely do:
- Pull two cases from the run and hold them
- Keep one case cool and one somewhere deliberately warm
- Taste a bottle from each at month one, three, and six
- Do it against a bottle you froze on day one
That is nearly free and it will catch the large problems. The brands that skip even this are the ones taking the phone call in month four with no idea what went wrong.
Shelf life is not the glamorous part of building a beverage. It is, reliably, the part that decides whether the second production run happens.
